Step 1 Start by preparing your ingredients. Remove the tops and strings from the snow peas, then peel the ginger and cut into very thin matchsticks. Step 2 Heat a large frypan on medium-high heat. Add the rice bran oil and ginger and fry for 1 minute or until fragrant. Add snow peas and fry for another 2 minutes until they are bright green with slightly singed edges. Step 3 Add the water and the soy sauce and cook quickly for 30 seconds until the liquid has almost completely evaporated and snow peas are tender. Step 4 Turn off the heat, add rice wine vinegar and season with lots of freshly cracked pepper and salt. Add the sesame oil before serving.
