Step 1 In a large pot over medium heat bring 4 cups water and the milk to a simmer. Add the salt. Step 2 Once simmering, slowly pour in the polenta, whisking constantly to prevent lumps. Step 3 When the polenta has thickened a little, reduce the heat to low. Cook gently, stirring occasionally for 30 to 40 minutes. When ready, the polenta should be thick and smooth, not gritty. Step 4 Turn off the heat and stir through the parmesan and season with pepper and more salt, if needed. Serve straight away.
