Step 1 Start by prepping your ingredients, cut the stems off the parsley then very finely slice and set aside. Roughly chop the leaves and keep seperate, then finely chop the garlic. Drain and rinse the butter beans. Step 2 Heat a medium sized saucepan over medium heat. Add 1 tablespoon of olive oil and fry the garlic, parsley stems andsalt for a minute or two. Add thechilli flakes, black pepper a big knob ofbutter and mix well. Step 3 Add the butter beans, 1/4 cup of water and the juice of half a lemon. Simmer gently for 5-10 minutes or until the liquid has thickened. Taste, adding more salt and pepper if needed. Stir through the parsley leaves. Step 4 Transfer to a small serving bowl and drizzle generously with extra virgin olive oil.
