Step 1 In a bowl, place the chicken breast and oregano, lemon juice and olive oil. Season with salt and pepper and mix to combine. Set aside. Step 2 In a food processor, blend together the green tahini ingredients until smooth. Add the water to loosen the tahini and to create your desired consistency. I like to add 100ml of water as I prefer the green tahini to be more of a dressing. Step 3 In a medium pan over medium heat, add the chicken breast and cook on each side for about 5 minutes. Once cooked, slice the chicken into bite sized pieces. Step 4 Cook your quinoa according to the instructions and prepare the vegetables. Step 5 Assemble the bowls with all the ingredients. Drizzle over the green tahini dressing or serve on the side.
