Step 1 In a container with a lid combine the oats, yoghurt, and chia seeds with the honey and water. Cover with the lid and let it sit in the fridge overnight. Step 2 Put almonds in a small fry pan over low heat. Toast the nuts, shaking the pan every now and then for 2-3 minutes or until golden brown. Remember not to walk away! Nuts and seeds burn very easily. Turn off the heat and allow nuts to cool completely. Store in an airtight container or jar until using. Step 3 To make the compote, put the blueberries in a small saucepan over medium-low heat. Add the chia seeds, honey, sugar, 1 tablespoon water, and a generous squeeze of lemon juice and bring to a simmer. Cook for 2 to 3 minutes until the blueberries turn jammy, and the liquid looks glossy and slightly thickened. Transfer to a container or jar and let it sit overnight in the fridge. The Next Morning Step 4 Transfer the oats to a bowl or small container, and top with berry compote & toasted almonds.
