Step 1 Place the strawberries in a bowl with the sugar. Squish them with your hands and then let sit for an hour or so. You can skip this step and mash the berries and sugar with a fork before cooking. It may need a slightly longer cooking time. Step 2 Transfer to a small saucepan and add the honey and vanilla. Simmer over low heat for 10–15 minutes, until thick and shiny. Step 3 Either use as is or blend until smooth. Store in a jar or container in the fridge for up to 5 days.
