Beans (Ewa Oloyin)

Ewa Oloyin (Yoruba) is high in protein and fibre. Ewa Oloyin is a staple in Nigeria, where it is mostly cooked with palm oil, onion, and crayfish, sometimes in a spicy tomato sauce. They can be used to make Akara (bean fritters), Moi-Moi (bean pudding), and Gbegiri (bean soup).
